I started baking from quite young age and loved it ever since. I always loved to go through my moms old cookbooks and look ant all the incredible recipes that I'm going to make one day. I like to combine traditional recipes with new twists. This Chocolate Rum Cake is one of the first cakes I ever baked and it's still one of my favorites.

One of the reasons that I like Summer is because of all these fresh vegetables and fruits. I'm very lucky that I live on a village so I have my own garden full of different vegetables. One of my favorite vegetables is zucchini. I absolutely love it in all ways, but my favorite is the fried zucchini. It's so easy to make and it's delicious. I decided to share my favorite zucchini recipe with you. xo
Ingredients:
1 Zucchini
2 tablespoons of milk
3/4 cup Flour
3/4 cup Breadcrumbs
2 eggs (you'l maybe need more, it depends on how big is zucchini)
1/2 teaspoon Salt
Fat for frying, preferably a mixture of oil and butter
Instructions:
♥ Wash and peel the zucchini. Cut it into slices, not very thick.
♥ Salt zucchini and put it into fridge for 10 minutes because they are full of water and salt will release water from them. Drain the water.
♥ In medium size bowl or plate mix 2 eggs with milk until it's fluffy. Salt eggs according to your taste.
♥ In plastic bowl add flour.
♥ In a separate bowl add breadcrumbs
♥ First drop zucchini into flour then dip it into egg mixture and then into breadcrumbs.
♥ Heat oil in a medium-size frying pan.
♥ Fry them until they are gold brown.
And that's it. They are so easy to make and taste so good. You can serve them as a side dish or you can eat it them as light snack.
Do you like Zucchini? How do you prepare them?
♥ ;)
