Quick Breakfast Egg Tortilla Recipe




If you are not a morning person or like to eat breakfast but don't have enough time to make something complicated, this recipe is for you. I'm a big breakfast girl, it might sound strange to some but I can eat as soon as I open my eyes. If I wait too long to have something to eat I start to feel nauseous. That's why I'm always looking for quick yet nutritious meals that will make me full until it's time for lunch. My latest obssesions are quick and easy egg tortilla. I love how versatile they are so I can never get bored of making them.



This recipe is a game-changer for mornings when you're short on time but still crave something more satisfying than a granola bar. It's ridiculously easy, takes about 5 minutes (seriously!), and uses ingredients you probably already have on hand. You can see how I make it on my Instagram



Here's the magic formula for your rushed mornings:


Ingredients:


  • 1 large flour tortilla (burrito size works best)
  • 2 eggs
  • Salt and pepper to taste
  • Optional toppings (cheese, salsa, avocado, veggies, etc.)

  1. Heat Up the Pan: Throw your pan on medium heat. Trust me, waiting for the pan to heat up is the longest part of this whole process!
  2. Whisk Away: While the pan heats up, crack those eggs into a bowl and give them a good whisking. Season with salt and pepper (don't skimp on the pepper, it adds a nice little kick!).
  3. Egg Time!: Once your pan is hot, add a thin layer of oil or butter. Pour in your whisked egg mixture and let it cook for a minute or two, until the bottom starts to set.
  4. The Tortilla Transformation: Here's the magic trick: carefully slide your trusty flour tortilla on top of the cooking eggs. Use a spatula to gently press it down and make sure it adheres to the eggs.
